UCAN Vegetable Spotlight | Presenting: Cauliflower

At the Catawba Trail Farm vegetables are really starting to grow. You will find Cauliflower growing in abundance this year. The Cauliflower is part of the cruciferous vegetable family, which includes broccoli, cabbage, kale, bok choy, collards and radishes. The vegetable’s color is commonly known to be white but it also is seen in green, orange and purple. This vegetable often gets overlooked in favor of its more colorful cousin, like broccoli. Don’t sleep on cauliflower, it still is a nutritious food. It contains Vitamin C,K, Folate, B6 vitamins and potassium. Below is a small chart of the main vitamins & minerals in 1 cup of cauliflower. 

Riced cauliflower Nutrients  What is amazing about cauliflower is its versatility. You can roast it, steam it and mash it to replace potatoes or even process it until it forms rice.
